Chicken Stir-Fry with Rice Noodles

Truly a “fast food” recipe. Fast food isn’t necessarily synonymous to junk food. Fast food recipes are something you want to have on hand during the weekdays when time is limited and you are so tired that you just want to eat something easy. This is made in no time with healthy ingredients. If you flatten the chicken with a rolling-pin it will cook faster. Soak the noodles in warm water while you are preparing the rest, so that they will be ready simultaneously. Add the broccoli directly to the pan, without boiling it first… You save time and you use less kitchen ware. Don’t worry, the broccoli will cook in the pan and a fine crispness will remain. So, when the chicken is cooked through add the broccoli and garlic and stir-fry until it is tender but still crispy. Then add the soy sauce. This will take you about 15-20 minutes all together. Add the noodles that you soaked and are ready now and give everything a stir. Remove everything from the pan, wipe it out, return to heat and when hot add the eggs as if you were making scrambled eggs. When cooked add the chicken and noodles mixture, stir and serve with wedges of lime. Dinner in 30 minutes! Could it be any easier??



  • 200g flat, wide rice noodles (similar in shape to tagliatele)
  • 250g chicken breast fillet
  • Oil for stir-frying
  • 2 garlic cloves, peeled and finely chopped
  • 200g broccoli, cut in half lengthways
  • About 2 tbsp soy sauce, to taste
  • 2 eggs, beaten
  • Sea salt and freshly ground pepper
  • Wedges of lime
